Hello Everyone . . .Welcome to my world of Cakes !
                                                   
                                                             Heres a little bit about me . . .
  From age 13 to age 18 I began working at Blue Cross with my Grandfather.
By the time I was 21 I already had 4 major jobs relating to office type work, typing, dictation, filing, etc.
I was soooo bored with it all that I decided I would take some time off.
Well in the midst of my "celebrating" my grandfather became somewhat worried  that I might
be enjoying doing nothing just a little too much.   So he began keeping a lookout for the perfect job.
    
Finally one day he found what he thought was the perfect job for me, there was a small ad in the paper.
  The ad stated, "Cake Decorator needed . . no experience necessary, will train.  Artistic talent helpful." 
Well my grandfather just knew this was the perfect profession for me,  the classes I had taken involving art
such as commercial art, sculpturing, drafting, etc.  were all "straight A's all the way".

After a few days of suggesting I decided to listen to my grandfather and go apply for the job.  
I had no idea I would stay with it so long.
I have now been a Baker/Pastry Chef/Cake Decorator/Wedding Cake Artist for over 25 years.
   I hope you enjoy viewing all of the wonderful photos of cakes I have done for so many friends over the years.

            All drawings are sculptured from icing.  I layer and smooth the icing starting with the background and then moving
to the foreground of the drawing to give it a 3D effect . . . .  Ask me about 3D stand up cakes and icing designs.
































Birthday etiquette and traditions are quite similar in many parts of the world; birthday candles which carry wishes up to God, birthday games which gauge how much more a child can do versus last year, and birthday pinches or taps which ensure good luck for the coming year. Some traditions are more specific to certain countries.

China - Noodles for Lunch.
The birthday child pays respect to his/her parents and receives a gift of money. Friends and relatives are invited to lunch and noodles are served to wish the birthday child a long life.
Ecuador - Pink Dress.
When a girl turns 15 there is a great celebration and the girl wears a pink dress. The father puts on the birthday girls first pair of high heels and dances the waltz with her while 14 maids and 14 boys also dance the waltz.

                 Louisiana's 175th Birthday 


1985

A cake to serve 12,000 people attending Louisiana's 175th Birthday Celebration Thursday receives the final touches Tuesday as Robin Currington of Baum's Bakery iced the shingles atop a plantation home. The cake, which will be shaped like the state on a 16-by-16-foot board, will feature home-grown attractions, such as oil derricks, pirogues, crawfish and strawberries, according to Tim Landry of the bakery.  To be cut by Elaine Edwards at 3pm Thursday in the Capitol's rotunda, the cake contains 1,500 pounds of cake mix, 2,700 eggs, and 700 pounds of icing.

Specialty Gourmet Layer Cakes


Apple Walnut:
Made with fresh apples and baked with walnuts.  A caramel brown sugar filling and icing sprinkled with walnuts.

Orange Sponge with Orange Icing: 
This orange sponge cake is made with orange juice and orange zest. Iced with a citrus buttercream including both orange and lemon juice.  Orange cakes always remind me of fall.

Key Lime with White Chocolate Icing:
This is a one layer sheet style layer cake. Key Lime cake has lots of key lime juice and the lemon pudding makes it extra moist.  The cake is also tinted green for a key lime look. It is iced with a rich white chocolate frosting which can also have a hint of lime flavor on request.

Chocolate Cherry:
This is a one layer sheet style layer cake.  Cherry pie filling and almond extract are baked right in the devilsfood cake.  It is iced with a rich chocolate ganache icing.

Chocolate Coconut:
A rich dark chocolate cake is filled with a cooked gooey coconut filling.  It is iced with a dark fudge icing and sprinkled with almond slivers.

Hummingbird:
A old fashioned favorite, this cake has plenty of pineapple, banana, chopped cherries, with cinnamon and nutmeg.  It is iced with cream cheese icing.

Italian Cream:
A traditional italian cream made with coconut and pecans.  It is iced with cream cheese icing.

Strawberry Passion:
A one layer split with a buttercream or whipcream filling and iced the same on the outside. The whole strawberries are placed standing upright on the top and strawberry glaze is covering the strawberries completely.

Huge 175th Birthday Cake
     Bakers reach the halfway point of making a cake that commemorates 175 years of statehood for Louisiana.  The ingredients consist of  1,500 pounds of mix, 2,700 eggs, 20 gallons of vegetable oil, 60 gallons of water and 700 pounds of buttercream icing.  The completed cake will be served Thursday during a Salute to Statehood at 1:30 pm at the State Capitol.  According to baker Tim Landry the cake should serve between 12,000 and 15,000 people.

Birthday Celebration Facts

Novelty candles are often used to celebrate birthdays. Though the exact origin of candle blowing is unknown, the history of placing candles on top of the cake is well documented. This tradition can be traced to Kinderfest (Kinder is the German word for 'children'), an 18th century German birthday celebration for children. A letter written in 1799 by Goethe recounts: "...when it was time for dessert, the prince's entire livery...carried a generous-size torte with colorful flaming candles - amounting to some fifty candles - that began to melt and threatened to burn down, instead of there being enough room for candles indicating upcoming years, as is the case with children's festivities of this kind...".  As the excerpt indicates, the tradition at the time was to place candles for each of the individual's life with some added candles 'indicating upcoming years'. Candles, being slow-burning, are believed to be symbolic of the passage of time. In fact, they were often used as timekeepers. The origin of birthday cake candles can be further traced back to the 16th century German tradition of placing tapers on Christmas trees.  This tradition was then brought to North America by German immigrants. By 1927, the Sears Roebuck catalogue offered birthday candles for sale.
